Rainbow Summer Salad With Mango
- 2 cups broccoli, chopped
- 1 cup red pepper, diced
- 1 cup orange bell pepper, diced
- 1 mango, pitted and diced
- 1 cup celery, diced
- 1 cup carrot, diced
- 12 cup cucumber, diced
- 14 cup pumpkin seeds (optional)
- 12 cup mango chutney
- 3 tablespoons olive oil
- 1 teaspoon poppy seed
- 2 tablespoons onions, finely diced
- pepper
- In a large bowl, combine all the salad ingredients.
- Dressing: Whisk together ingredients for the dressing.
- toss dressing with salad.
