Blackberry Cobbler 3 Recipe
- 1/4 c. Soft butter or possibly margarine
- 1/2 c. Sugar
- 1 c. Unsifted regular all-purpose flour
- 2 tsp Baking pwdr
- 1/8 tsp Salt
- 1/2 c. Lowfat milk
- 1 can (1-lb) fruit, cut in small pcs, or possibly berries or possibly fresh cooked fruit to equal 1 pound Sugar to taste (for topping)
- Cream butter and sugar till smooth and well blended.
- Sift the flour with baking pwdr and salt.
- Add in flour mix a little at a time alternately with the lowfat milk, beating just till the thick batter is smooth.
- Spread the batter proportionately in a greased 9-inch square baking pan (it will rise to the top while baking).
- Pour berries or possibly fruit and their liquid over batter.
- Sprinkle with sugar to taste.
- Bake in 350 deg.
- oven for about 1 hour or possibly till crust is golden.
- I live in wild blackberry country (Hi, Dot) so which's what we use.
- We also put a little cinnamon in the sugar.
- You just spread the berries over the top of the batter and the batter rises up around it and the berries sink.
- We also triple the recipe (teenage boys).
- Oh - I do not sift either - just stir well.
