Lemon Cupcakes with Lemon Glaze
- 1 box yellow cake mix
- 1 box lemon jello
- 5 tbsp confectioner's sugar
- 5 tbsp lemon juice
- bake yellow cupcakes according to directions on box.
- when done, let cool.
- refridgerate 30 minutes.
- after 30 minutes, remove from fridge.
- use a fork to poke holes in cupcakes.
- as many holes per cake as you can get without tearing cake apart.
- cook jello according to directions on box.
- while still warm, spoon jello over each cupcake.
- (about 3-4 tbspn each)
- when done, put cupcakes back in fridge for 2 hours.
- put confectioner's sugar and lemon juice in bowl and mix.
- this is the glaze.
- adjust amounts if its too thick or runny.
- put glaze on top of cupcakes.
- garish with lemon zest.
