Ono-lishious: Grilled Sesame Chicken Satay Papaya Salad with Hoisin Balsamic Vinaigrette

  1. For the Chicken Satay: Combine the first 8 ingredients to coat chicken.
  2. Let marinate for 2 hours.
  3. Skewer 3 to 4 cubes of chicken per stick.
  4. Sprinkle chicken with sesame seeds.
  5. Set aside before grilling.
  6. For the Papaya Salad: Cut papaya in half, seed and skin.
  7. Cut papaya into quarters, then cut into thin slices.
  8. Squeeze the lime juice over the papaya and arrange on plate over mixed greens.
  9. For the "Hoisin" Balsamic Vinaigrette: Combine the first set of ingredients in blender.
  10. With blender on, emulsify by adding oil slowly until well blended.
  11. Add salt, sugar and pepper, to taste.
  12. Set aside.
  13. Preheat grill to 400 degrees F. Place skewers on hot grill and cook 3 minutes then turn.
  14. Baste chicken with marinade.
  15. Cook chicken for another 3 minutes.
  16. Check chicken for doneness.
  17. Place the skewers over the salad and garnish with diced tomatoes.
  18. Drizzle with vinaigrette before serving.
