Breeze Fiesta Beef Salad Recipe
- 1 1/2 lb Farmland Black Angus Beef boneless top sirloin steak, 1 1/4" thick
- 1/2 c. picante sauce
- 1 1/2 tsp cornstarch
- 1/2 tsp grnd cumin - (to 1)
- 1/2 tsp garlic salt
- 1/4 tsp freshly-grnd black pepper
- 2 x ripe avocados - (to 3) sliced, and brushed with Lime juice as needed
- 2/3 x ruby red grapefruit peeled, and separated into sections Red leaf lettuce as needed
- 1/2 c. sliced pitted ripe olives Minced fresh cilantro leaves
- 1/2 c. dairy lowfat sour cream or possibly plain yogurt
- 1/2 c. picante sauce
- 1/2 c. minced seeded tomato
- 2 Tbsp. minced green onion
- 1 Tbsp. minced fresh cilantro leaves Warm pepper sauce if you like
- Cut steak into 1/2-inch thick slices.
- Place beef slices in food storage bag.
- Combine picante sauce and cornstarch, cumin, garlic salt and pepper for marinade in small bowl.
- Add in marinade to steak slices, turning to coat.
- Close bag securely and marinate in refrigerator 20 min, turning occasionally.
- Place beef strips on grill for 3 to 5 min.
- When done remove from grill.
- Arrange avocado and grapefruit sections in pinwheel pattern on each of six lettuce-lined plates.
- Arrange beef mix in center of pinwheels.
- Sprinkle each with olives and cilantro.
- Serve beef salad with Fiesta Dressing.
- Fiesta Dressing: Combine lowfat sour cream, picante sauce, tomato, green onion, cilantro and pepper sauce, if you like.
- Cover and chill till ready to serve.
- This recipe yields 6 servings.
