Breeze Fiesta Beef Salad Recipe

  1. Cut steak into 1/2-inch thick slices.
  2. Place beef slices in food storage bag.
  3. Combine picante sauce and cornstarch, cumin, garlic salt and pepper for marinade in small bowl.
  4. Add in marinade to steak slices, turning to coat.
  5. Close bag securely and marinate in refrigerator 20 min, turning occasionally.
  6. Place beef strips on grill for 3 to 5 min.
  7. When done remove from grill.
  8. Arrange avocado and grapefruit sections in pinwheel pattern on each of six lettuce-lined plates.
  9. Arrange beef mix in center of pinwheels.
  10. Sprinkle each with olives and cilantro.
  11. Serve beef salad with Fiesta Dressing.
  12. Fiesta Dressing: Combine lowfat sour cream, picante sauce, tomato, green onion, cilantro and pepper sauce, if you like.
  13. Cover and chill till ready to serve.
  14. This recipe yields 6 servings.
