Scorched Cauliflower and Anchovy Mayo Ketchup Stir-Fry
- 1/2 bunch Cauliflower
- 3 anchovies Anchovies (or fish sauce)
- 1 Mayonnaise
- 1 Ketchup
- 1 dash Garlic (if preferred)
- Break the cauliflower into easy-to-eat pieces, and rinse in water.
- Rub cut ends of garlic around the inside of a microwave safe container.
- Or coat in minced garlic.
- Wrap the cauliflower from Step 1 into plastic wrap, and microwave at 600W for 1.5 minutes, or at 500W for 2 minutes to roughly cook through.
- Place finely minced anchovies on top of step 2, (mix in if using fish sauce), and stir in the mayonnaise.
- Mix in ketchup as well (it is rich, so add just a little).
- Bake for 15 minutes in an oven preheated to 390F/200C, and it is done once it turns golden brown.
- Sprinkle powdered cheese to your liking.
- This will drastically increase the calories.
