Eggplant Frites with Roasted Garlic Aioli
- Roasted Garlic Aioli
- 1 cup KRAFT Signature Mayonnaise
- 2-1/2 Tbsp. roasted garlic paste
- Eggplant Frites
- 4 each small eggplant, cut into large batons
- 2 cups rice flour
- 1 tsp. salt
- Roasted Garlic Aioli: Combine ingredients.
- Eggplant Frites: Soak eggplant batons in ice water 15 min.
- Drain well.
- Toss with flour.
- Fry in 350 degrees F deep fryer 4 min.
- or until crisp.
- Drain on paper towels.
- Season with salt.
- Serve 6 oz.
- eggplant frites with 2 Tbsp.
- Roasted Garlic Aioli as a shared appetizer.
