Eggplant Frites with Roasted Garlic Aioli

  1. Roasted Garlic Aioli: Combine ingredients.
  2. Eggplant Frites: Soak eggplant batons in ice water 15 min.
  3. Drain well.
  4. Toss with flour.
  5. Fry in 350 degrees F deep fryer 4 min.
  6. or until crisp.
  7. Drain on paper towels.
  8. Season with salt.
  9. Serve 6 oz.
  10. eggplant frites with 2 Tbsp.
  11. Roasted Garlic Aioli as a shared appetizer.
