Middle Eastern Chicken Skewers with Olive and Hummus Dip
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 2 teaspoons crushed garlic
- 1 teaspoon paprika
- 1 teaspoon finely chopped chilli
- 2 tablespoons tahini
- Grated rind and juice of half a lemon Safeway 4 ct For $5.00 thru 02/09
- 500g chicken breast fillets, cut into 1.5cm cubes
- Garlic olive oil spray
- 1 x 150g Captain's Table Middle Eastern Olive and Hummus Dip
- Fresh bay leaves or fresh herbs, for garnish
- Soak 18 bamboo skewers in hot water for 20-30 minutes.
- Combine the oil with the cumin, garlic, paprika, chilli, tahini and lemon, mix to form a paste.
- Coat the chicken thoroughly in the marinade then thread three pieces of chicken onto each skewer.
- Chill for 30-60 minutes.
- Spray a chargrill plate with oil and cook the skewers over a medium heat for 8-10 minutes, turning frequently until cooked through.
- Place the skewers onto a serving platter and serve with the Middle Eastern Olive and Hummus for dipping.
- NB If available thread bay leaves cut in half at each end of the skewers
