Middle Eastern Chicken Skewers with Olive and Hummus Dip

  1. Soak 18 bamboo skewers in hot water for 20-30 minutes.
  2. Combine the oil with the cumin, garlic, paprika, chilli, tahini and lemon, mix to form a paste.
  3. Coat the chicken thoroughly in the marinade then thread three pieces of chicken onto each skewer.
  4. Chill for 30-60 minutes.
  5. Spray a chargrill plate with oil and cook the skewers over a medium heat for 8-10 minutes, turning frequently until cooked through.
  6. Place the skewers onto a serving platter and serve with the Middle Eastern Olive and Hummus for dipping.
  7. NB If available thread bay leaves cut in half at each end of the skewers
