Barley Basil Pilaf

  1. Heat oil in a 1 quart saucepan over medium heat just until Hot, not smoking.
  2. Add barley and cook 5 min.
  3. or until browned, stirring constantly.
  4. Add chicken broth and salt, bring to a boil.
  5. Cover and reduce heeat and simmer 30 min.
  6. or until barley is tender and liquid is absorbed.
  7. Remove from heat.
  8. stir in basil, green onions and nutmeg.
