Thai Chicken and Coconut Soup
- 3 cups chicken stock
- 1 teaspoon lime rind, grated
- 14 cup lime juice, fresh
- 1 tablespoon lemongrass, fresh peeled
- 2 tablespoons fish sauce
- 12 teaspoon ginger, minced
- 12 teaspoon Thai chile, minced
- 1 lb chicken, boneless skinless cut into bite-sized pieces
- 14 ounces coconut milk
- 2 tablespoons cilantro, fresh chopped
- Combine the 1st 7 ingredients in pot and bring to a simmer over medium heat.
- Stir in chicen and coconut milk.
- Cook 3 minutes or until chicken is done.
- Sprinkle with cilantro and serve.
