Poached Salmon

  1. Cut salmon into 4 (3-ounce) portions.
  2. Heat olive oil to 95 degrees F. Add thyme and garlic.
  3. Season the salmon with salt and pepper.
  4. Place in olive oil for 8 minutes.
  5. Remove from olive oil.
  6. Season with fleur de sel.
  7. Garnish with dressed micro greens.
