Poached Salmon
- 12 ounces center-cut wild salmon
- 2 quarts olive oil
- Salt and freshly ground black pepper
- 1 sprig thyme
- 1 clove garlic
- Fleur de sel
- 1 cup micro greens
- Cut salmon into 4 (3-ounce) portions.
- Heat olive oil to 95 degrees F. Add thyme and garlic.
- Season the salmon with salt and pepper.
- Place in olive oil for 8 minutes.
- Remove from olive oil.
- Season with fleur de sel.
- Garnish with dressed micro greens.
