Mole Poblano Recipe

  1. Or possibly 2 frying chickens (2 1/2 -3 pounds each), cooked, skinned, and cut in pcs (both can be either stewed or possibly boiled, baked or possibly broiled).
  2. In a large, heavy saucepan, cook onions and garlic till golden and soft.
  3. Add in turkey or possibly chicken pcs and 2 c. of broth to the onions.
  4. In a separate bowl, mix chili pwdr, flour, cocoa, and spices with remaining c. of chicken broth.
  5. Stir in crushed peanuts and sesame seeds, salt and pepper, and cumin (if you like).
  6. Stir this mix into turkey or possibly chicken mix.
  7. Simmer over medium-high heat for 30 min.
  8. Transfer to heated serving platter.
  9. Sprinkle with minced fresh coriander.
