Tamale Dough
- 4 cups masa harina
- 1-1/2 cups lard
- 1 Tbsp. salt
- 1-1/2 tsp. CALUMET Baking Powder
- 1-1/4 qt. (5 cups) hot water, divided
- 1/2 lb. dried corn husks, soaked in hot water overnight, drained
- Mix masa harina, lard, salt and baking powder in large bowl with wooden spoon until blended.
- Gradually add 4 cups hot water, stirring after each addition until mixture forms stiff dough.
- (If dough is still dry, gradually stir in enough of the remaining water until mixture forms stiff dough.)
- Assemble tamales, using about 2 Tbsp.
- of the masa mixture and 1 to 2 Tbsp.
- of the filling of your choice for each tamale.
- Steam in tamalera 1 hour.
- Cool slightly.
