Tamale Dough

  1. Mix masa harina, lard, salt and baking powder in large bowl with wooden spoon until blended.
  2. Gradually add 4 cups hot water, stirring after each addition until mixture forms stiff dough.
  3. (If dough is still dry, gradually stir in enough of the remaining water until mixture forms stiff dough.)
  4. Assemble tamales, using about 2 Tbsp.
  5. of the masa mixture and 1 to 2 Tbsp.
  6. of the filling of your choice for each tamale.
  7. Steam in tamalera 1 hour.
  8. Cool slightly.
