Mexican Turkey Meatloaf
- 3 lb ground turkey
- 3/4 cup breadcrumbs
- 1 poblano pepper; roasted and large dice
- 1 red bell pepper; roasted and large dice
- 1 yellow bell pepper; roasted and large dice
- 1 orange bell pepper; roasted and large dice
- 1 small red onion; minced
- 2 stick celery; small dice
- 4 clove garlic; minced
- 1/2 cup diced green chiles
- 1 tbsp roasted and ground coriander
- 1 tbsp roasted and ground cumin
- 1 tbsp ground white pepper
- 1 tbsp Mexican oregano
- 2 tsp cayenne pepper
- 2 tsp thyme; minced
- 1 stick butter
- 1 pinch salt
- Melt butter slowly in a saute pan.
- Sweat onions and celery until translucent.
- Add garlic and a pinch of salt.
- Sweat until fragrant.
- Cool down in fridge.
- Place turkey, breadcrumbs, spices, salt, cooled veggies, and peppers in a large mixing bowl and mix thoroughly.
- Cover and bake at 350 for approximately 40-45 minutes.
- Uncover and continue cooking for approximately 10-15 more minutes or until thermometer reaches 165.
