Mexican Turkey Meatloaf

  1. Melt butter slowly in a saute pan.
  2. Sweat onions and celery until translucent.
  3. Add garlic and a pinch of salt.
  4. Sweat until fragrant.
  5. Cool down in fridge.
  6. Place turkey, breadcrumbs, spices, salt, cooled veggies, and peppers in a large mixing bowl and mix thoroughly.
  7. Cover and bake at 350 for approximately 40-45 minutes.
  8. Uncover and continue cooking for approximately 10-15 more minutes or until thermometer reaches 165.
