Monterey Casserole
- 1 lb. lean ground beef
- 1 Tbsp. oil
- 1/2 c. onion, chopped
- 2 cloves garlic, minced
- 1 (28 oz.) can stewed tomatoes
- 1 pkg. taco seasoning mix
- 1 (4 oz.) can diced green chilies
- 2 (7 oz.) pkg. tortillas, lightly crushed
- 1/2 lb. Mozzarella cheese, shredded
- 1 pt. sour cream
- 1/2 c. Cheddar cheese, shredded
- bag of tortilla chips
- Heat oil, saute onion and garlic.
- Add meat and brown.
- Blend in tomatoes, taco seasoning and chilies, simmer 10 minutes. Grease 9 x 13-inch baking dish.
- Layer 1/2 chips over bottom of pan.
- Spoon in meat mixture the Mozzarella cheese and next sour cream, then top with rest of chips.
- Bake at 350u0b0 for approximately 30 minutes.
- Sprinkle with Cheddar cheese and continue baking until cheese is melted.
