Apple Strudel Breakfast Cereal With Quinoa

  1. Rinse quinoa well with water to remove bitter coating; drain.
  2. Place almonds in a medium saucepan over medium-high heat.
  3. Stir frequently until almonds are toasted and fragrant, about 3-4 minutes.
  4. Set aside.
  5. Combine quinoa, water, apple, raisins, and cinnamon in the same saucepan.
  6. Bring to a boil, cover, and reduce to a simmer for 17 minutes.
  7. Stir in vanilla and brown sugar (if using).
  8. To serve, divide between bowls, top with vanilla yogurt, and sprinkle with toasted almonds.
