Homemade Steamed Tapioca
- 1/2 pounds, 78 ounces, weight Fresh Tapioca Or Cassava Root
- 6- 1/4 ounces, weight Desiccated Coconut
- 1 teaspoon Salt To Taste
- 1/2 teaspoons Pepper
- 1 whole Onion, Finely Diced
- Wash and peel the skin of the tapioca.
- Now grate the tapioca and put in a medium bowl.
- Combine 150 gram desiccated coconut, salt, pepper and onion.
- Mix slowly.
- Using 5 moulds, metal cups or small bowls (I used small bowls about 2 inches in diameter), put tapioca mixture into the moulds and sprinkle the remaining desiccated coconut, evenly distributing the coconut over the tapioca mixture.
- Now place the moulds in a steamer and steam for 1 minute uncovered.
- After 1 minute, put the lid on and steam for 15 minutes on high heat.
- When tapioca is cooked, remove from the mould and place on a dish.
- Serve hot with curry.
- Enjoy.
