Baked Fish With Mushrooms And Cream Recipe

  1. Preheat broiler.
  2. Heat 2 Tbsp.
  3. butter in heavy large skillet over medium-high heat.
  4. Add in mushrooms; saute/fry till golden brown, about 7 min.
  5. Add in Cognac; simmer till liquid reduces to glaze.
  6. Reduce heat to medium.
  7. Add in tomatoes, cream and thyme; simmer till sauce thickens, stirring occasionally, about 7 min.
  8. Season with salt and pepper.
  9. Heat remaining 2 Tbsp.
  10. butter in another heavy large skillet over medium-high heat.
  11. Season fish with salt and pepper.
  12. Add in fish to skillet; saute/fry till just cooked through, about 3 min per side.
  13. Transfer fish to broiler-proof baking dish.
  14. Spoon sauce over.
  15. Sprinkle cheese over.
  16. Broil till cheese melts, about 2 min.
  17. Serves 2.
