Chicken Barley Pilaf Recipe
- 1/2 c. diced finely chicken
- 1 1/3 c. chicken broth
- 1/2 c. quick pearled barley
- 2 tbsp. onion, minced
- 2 tbsp. green pepper, minced
- 1/2 c. celery, diced
- 1 teaspoon dry parsley
- 1 tbsp. butter
- Heat broth and butter to boiling.
- Place all remaining ingredients in casserole and pour broth over ingredients.
- Bake uncovered 1 hour at 350 degrees.
- Stir 1/2 way through baking time.
- Last 5 min of baking sprinkle 1/4 c. Parmesan cheese on top and return to oven.
