White Chili
- 1 tablespoon vegetable oil
- 1 cup chopped onion
- 2 garlic cloves, finely chopped
- 3 cups chicken broth
- 2 tablespoons chopped fresh cilantro or 12 teaspoon ground coriander
- 2 tablespoons fresh squeezed lime juice
- 1 teaspoon ground cumin
- 12 teaspoon dried oregano
- 14 teaspoon salt
- 14 teaspoon red pepper sauce (Sarachi)
- 3 (15 ounce) cans great northern beans
- 2 cups cooked chicken breasts, chopped
- sour cream
- shredded monterey jack cheese
- Heat oil in 4 quart pot over medium heat.
- Cook onions and garlic, stirring occasionally, until onions are tender.
- Stir in remaining ingredients except for chicken.
- Bring to a boil and reduce heat.
- Simmer uncovered for 20 minutes.
- Stir in chicken and simmer until chicken is hot.
- Top with shredded montery jack cheese and a dollop of sour cream before serving.
