Lemon Ginger Chicken with a Dill Rub
- 4 whole Chicken Breasts
- 1 whole Lemon
- 5 ounces, weight Ginger
- 1 Tablespoon Olive Oil
- 2 teaspoons Dill
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1 whole Onion
- 1 whole Tomato
- Preheat the oven to 375F.
- Pour the olive oil into a Pyrex baking dish.
- Slice the lemon into 8 wheels.
- Peel and chop the ginger into 8 chunks.
- Mix the dill, salt, and pepper in a bowl.
- Rub each chicken breast with the dill mixture and place in the baking dish.
- Put two chunks of ginger on each breast.
- Then top each ginger chunk with a lemon wheel.
- Wedge the onion and tomato and arrange around the breasts.
- Cover with aluminum foil and bake for 15 minutes.
- Remove the foil and bake for 20-25 minutes longer.
- Remove from the oven.
- Slice and enjoy.
