Lemon Ginger Chicken with a Dill Rub

  1. Preheat the oven to 375F.
  2. Pour the olive oil into a Pyrex baking dish.
  3. Slice the lemon into 8 wheels.
  4. Peel and chop the ginger into 8 chunks.
  5. Mix the dill, salt, and pepper in a bowl.
  6. Rub each chicken breast with the dill mixture and place in the baking dish.
  7. Put two chunks of ginger on each breast.
  8. Then top each ginger chunk with a lemon wheel.
  9. Wedge the onion and tomato and arrange around the breasts.
  10. Cover with aluminum foil and bake for 15 minutes.
  11. Remove the foil and bake for 20-25 minutes longer.
  12. Remove from the oven.
  13. Slice and enjoy.
