Coconut Pumpkin Praline Muffins

  1. Preheat oven to 400 degrees and grease 12 muffin tins or use bakers cups.
  2. Combine flour, brown sugar, coconut, pecans, pumpkin pie spice, and baking powder in large bowl.
  3. Combine egg, pumpkin, milk, and vegetable oil in medium bowl.
  4. Add to flour mixture.
  5. Stir just until blended.
  6. Spoon batter into greased or paper-lined muffin cups, filling 3/4 full.
  7. Mix brown sugar, coconut, pecans and milk to make praline topping.
  8. Top each muffin with mixture.
  9. Bake in preheated 400 degree oven for 18 to 20 minutes or until wooden pick inserted in center comes out clean.
  10. Cool in pan for 15 minutes, remove to wire rack.
  11. Serve warm.
