Coconut Pumpkin Praline Muffins
- 2 cups all-purpose flour
- 12 cup brown sugar, packed
- 12 cup shredded coconut
- 12 cup pecans, chopped
- 2 14 teaspoons pumpkin pie spice
- 2 teaspoons baking powder
- 1 egg
- 1 cup solid-pack pumpkin
- 12 cup milk
- 13 cup vegetable oil
- 12 cup brown sugar
- 12 cup shredded coconut
- 12 cup pecans, chopped
- 3 tablespoons milk
- Preheat oven to 400 degrees and grease 12 muffin tins or use bakers cups.
- Combine flour, brown sugar, coconut, pecans, pumpkin pie spice, and baking powder in large bowl.
- Combine egg, pumpkin, milk, and vegetable oil in medium bowl.
- Add to flour mixture.
- Stir just until blended.
- Spoon batter into greased or paper-lined muffin cups, filling 3/4 full.
- Mix brown sugar, coconut, pecans and milk to make praline topping.
- Top each muffin with mixture.
- Bake in preheated 400 degree oven for 18 to 20 minutes or until wooden pick inserted in center comes out clean.
- Cool in pan for 15 minutes, remove to wire rack.
- Serve warm.
