Grilled Polenta with Salsa
- 3 cups chicken or vegetable stock
- 1 cup instant polenta
- 1 Lebanese cucumber, seeded and finely chopped
- 1/2 red onion, finely chopped
- 1/2 red capsicum, finely chopped
- 1/2 cup corn kernels (frozen or canned)
- olive oil spray
- 1/3 cup JL KRAFT Tomato & Basil Deli Spread
- cooked chicken skewers, optional, to serve
- Place stock in a large saucepan and bring to boil.
- Reduce heat to low and whisk in polenta, cooking for 3-4 minutes until thickened.
- Pour polenta into a lined 18 x 28cm slab tin, allow to cool, then chill for 30 minutes or until firm.
- Turn polenta onto a board and cut into 12 triangles.
- Combine cucumber, onion, capsicum and corn in a bowl; set aside.
- Heat a grill pan over high heat, spray polenta with oil and grill polenta in batches, for 3-4 minutes each side, until browned.
- Place two pieces of polenta on each serving plate.
- Spread with some Deli Spread and top with salsa.
- Serve immediately with cooked chicken skewers.
