Alfredo's Southwestern Potato Soup

  1. Preheat oven to 400 degrees.
  2. Toss potatoes with vegetable oil and Taco Seasoning.
  3. Roast potatoes for 30 minute tossing once halfway thru.
  4. In 4-6 quart sauce pan, cook bacon till crisp, remove bacon, drain and reserve.
  5. Drain all but 1 - 1/2 tbls.
  6. bacon grease.
  7. Add green onions and saute 1 minute until soft.
  8. Add flour and whisk 1-2 minute.
  9. Add 1 cup milk and whisk until slightly thickened, 1-3 minute.
  10. Add Alfredo sauce and stir to combine.
  11. Add potatoes and reserved bacon and stir.
  12. Add balance of milk to desired consistency, reduce heat, cover & simmer 10 minutes.
  13. Serve with green onion tops as garnish.
