Alfredo's Southwestern Potato Soup
- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 1 (16 ounce) jarragu cheesy classic alfredo sauce
- 4 slices thick cut bacon, rough chopped
- 4 green onions, chopped (white & pale green parts for soup, tops for garnish)
- 1 (1 1/4 ounce) package taco seasoning (Used McCormicks hot)
- 2 cups milk (divided)
- 1 12 tablespoons flour
- 3 tablespoons vegetable oil
- Preheat oven to 400 degrees.
- Toss potatoes with vegetable oil and Taco Seasoning.
- Roast potatoes for 30 minute tossing once halfway thru.
- In 4-6 quart sauce pan, cook bacon till crisp, remove bacon, drain and reserve.
- Drain all but 1 - 1/2 tbls.
- bacon grease.
- Add green onions and saute 1 minute until soft.
- Add flour and whisk 1-2 minute.
- Add 1 cup milk and whisk until slightly thickened, 1-3 minute.
- Add Alfredo sauce and stir to combine.
- Add potatoes and reserved bacon and stir.
- Add balance of milk to desired consistency, reduce heat, cover & simmer 10 minutes.
- Serve with green onion tops as garnish.
