Hash-Brown Medley
- 4 potatoes, peeled
- unpeeled
- 1 green bell pepper, chopped
- 1 onion, cut into cubes
- 4 cloves garlic, sliced
- 1 cup water
- 2 cups corn, frozen, thawed
- fresh
- 1 lg. tomato, peeled, seeded and diced
- Place the potatoes, green pepper, onion, and garlic in a nonstick frying pan with 1/2 cup of the water.
- Cook, stirring, over medium heat for 5 minutes.
- Add the remaining 1/2 cup water.
- Cover and continue to cook for another 10 minutes, stirring occasionally.
- Add the corn and tomato.
- Cook, stirring, for an additional 5 minutes.
