Strawberry Truffle Pie
- 1 baked pie pastry shells (9 inch)
- 1 cup semi-sweet chocolate chips (or pieces)
- 1 tablespoon butter
- 1 (8 ounce) package cream cheese, cubed and softened
- 2 tablespoons orange liqueur or 2 tablespoons orange juice
- 14 cup powdered sugar
- 1 lb fresh strawberries, stems removed and halved
- 14 cup red currant jelly, melted
- whipped cream (optional)
- In a small saucepan, combine chocolate and butter; cook/stir over med-low heat until melted.
- Add in cream cheese and liqueur; cook/stir until smooth.
- Remove from heat; stir in powdered sugar.
- Spread chocolate mixture in bottom of baked pie shell.
- Arrange strawberries, stemmed ends down, on chocolate layer.
- Brush berries with melted jelly; cover and chill at least 4 hours.
- Let stand at room temperature for 30 minutes before serving.
- Serve with whipped cream, if desired.
