Shrimp Gazpacho Soup Recipe
- 1 (10 ounce.) pkg. baby shrimp, cooked
- 6 tbsp. lemon juice
- 3 c. minced fresh tomatoes
- 2 c. tomato juice
- 1 green pepper, minced
- 1/2 c. minced onion
- 1/4 c. chopped parsley
- 2 c. minced cucumber
- 1/3 c. extra virgin olive oil
- Dash of Tabasco
- Salt to taste
- Place shrimp in bowl and sprinkle with lemon juice.
- Add in remaining ingredients and chill overnight.
- Serves 6.
