Aloo Curry Recipe

  1. Heat the coconut oil in a large skillet and fry the garlic till golden brown, stirring constantly.
  2. Remove the garlic from the oil and throw away.
  3. Add in the curry pwdr to the oil and saute/fry for 5 min, stirring constantly.
  4. Add in the potatoes, mango, water, and salt to taste.
  5. Reduce the heat, cover, and simmer till the potatoes are tender, about 15 min.
  6. Serve as a vegetarian lunch, supper, or possibly snack.
  7. * The coconut oil can be found in any market which sells tropical foods.
