Aloo Curry Recipe
- 1/4 c. coconut oil*
- 2 Tbsp. curry pwdr
- 1 slc green mango
- 1 x peeked, (optional)
- 2 x garlic cloves, chopped
- 2 lb potatoes, peeled and
- 1 c. water
- 1 x salt
- Heat the coconut oil in a large skillet and fry the garlic till golden brown, stirring constantly.
- Remove the garlic from the oil and throw away.
- Add in the curry pwdr to the oil and saute/fry for 5 min, stirring constantly.
- Add in the potatoes, mango, water, and salt to taste.
- Reduce the heat, cover, and simmer till the potatoes are tender, about 15 min.
- Serve as a vegetarian lunch, supper, or possibly snack.
- * The coconut oil can be found in any market which sells tropical foods.
