Orange and Olive Salad from Morocco

  1. Peel the oranges and slice or cut into bite sized pieces.
  2. Chop olives and put in a bowl with the oranges.
  3. Blend olive oil, vinegar, garlic, paprika, cayenne pepper, salt ,and pepper and pour over the oranges and olives.
  4. Mix well.
  5. Refrigerate for a few hours to allow the flavors to blend, or you can serve immediately.
  6. Add the parsley just before serving.
