Sauteed Curried Veal & Eggplant Recipe

  1. In colander combine eggplant with 1/4 tsp.
  2. salt, toss and let stand 30 min.
  3. Pat dry with paper towels.
  4. Pan broil veal in non- stick skillet over high heat, breaking veal apart into pcs, till slightly browned but not cooked through.
  5. Reduce heat to medium, add in onion and saute/fry 3 to 5 min.
  6. Add in eggplant and continue sauteing, stirring occasionally till eggplant starts to brown.
  7. Stir in remaining 1/2 tsp.
  8. salt and curry and warm sauce, continue cooking till mix is well browned and moisture has evaporated.
  9. 2 servings.
  10. Serving = 4 ounces protein.
