Brazilian Cheese Buns

  1. Heat convection oven to 350 degrees F.
  2. Bring butter, water, milk and salt to boil in saucepan on medium heat.
  3. Place tapioca flour in large mixing bowl.
  4. Pour butter mixture over flour; beat with mixer on medium speed until blended.
  5. Beat on high speed until mixture is smooth and elastic.
  6. Beat garlic and 3/4 cup cheese into dough until blended.
  7. Cool dough slightly.
  8. Add eggs gradually to dough; beat on medium speed until eggs are incorporated and dough is smooth.
  9. Using 2-Tbsp.
  10. scoop, drop dough, 1-1/2 inches apart, onto parchment-covered baking sheet.
  11. Sprinkle tops with remaining cheese.
  12. Bake 17 min.
  13. or until buns have a freckled appearance and are very light brown.
  14. Serve warm.
