Simple Red Beans and Rice
- 1 lb dried red beans
- 1 lb bacon
- 1 onion, chopped
- 4 garlic cloves, minced
- 4 cups chicken broth
- 1 teaspoon cajun seasoning
- 2 bay leaves
- 2 cups rice
- Sort and rinse beans.
- Add beans to a pot of water and bring to boil.
- Simmer beans for 1 hour.
- Drain.
- Return to pot and add 4 cups chicken or vegetable broth.
- Add cajun seasoning and bay leaves.
- Prepare bacon and set aside.
- Saute onion and garlic in 2 tbsp bacon fat until soft (about 6 minutes).
- Add onions and garlic to pot of beans.
- Chop bacon and add to pot.
- Bring to a boil and then reduce heat until beans are just simmering.
- Simmer uncovered for 45 minutes to 1 hour (broth should reduce).
- Prepare rice according to package directions.
- Serve beans over rice.
