Simple Red Beans and Rice

  1. Sort and rinse beans.
  2. Add beans to a pot of water and bring to boil.
  3. Simmer beans for 1 hour.
  4. Drain.
  5. Return to pot and add 4 cups chicken or vegetable broth.
  6. Add cajun seasoning and bay leaves.
  7. Prepare bacon and set aside.
  8. Saute onion and garlic in 2 tbsp bacon fat until soft (about 6 minutes).
  9. Add onions and garlic to pot of beans.
  10. Chop bacon and add to pot.
  11. Bring to a boil and then reduce heat until beans are just simmering.
  12. Simmer uncovered for 45 minutes to 1 hour (broth should reduce).
  13. Prepare rice according to package directions.
  14. Serve beans over rice.
