Veal Parmigiana Recipe
- 2 egg whites, beaten
- 1/4 teaspoon pepper
- 1/2 c. Italian bread crumbs
- 1 tbsp. grated Parmesan cheese
- 1 pound thin veal cutlets, cut into 6 servings
- Vegetable cooking spray
- 1 (8 ounce.) can tomato sauce
- 1/2 jar prepared spaghetti sauce
- 2 (1 ounce.) slices part skim Mozzarella cheese
- Mix egg and pepper; beat with a wire whisk.
- Combine bread crumbs and Parmesan cheese.
- Dip veal into egg mix and dredges in bread crumb mix.
- Saute/fry veal in a large skillet coated with cooking spray till golden.
- Put in shallow baking dish.
- Pour tomato sauce and spaghetti sauce over veal, Top with cheese slices.
- Bake at 350 degrees for 15-20 min.
- 6 servings.
