Portabella Pasta

  1. Cook the pasta according to package directions.
  2. While the pasta is cooking, heat the oil in a large skillet over medium-high heat.
  3. Add the portabellas, green chilies, onions, and red pepper; cook and stir until the vegetables are tender, 5 to 6 minutes.
  4. Stir in the garlic, and cook another 30 seconds.
  5. Add the marinara sauce, and heat through.
  6. Season with salt and pepper.
  7. Drain the pasta and toss with the sauce; serve immediately.
  8. Servings: 4.
