Negi Miso Don (Minced Meat and Miso Rice Bowl)
- 200 g minced pork or beef
- 200 g tofu
- 1 Japanese leek or green onion
- 1 Tbsp miso
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp sake
- 1 Tbsp sweet flour paste (tian mian jiang)
- 1 tsp each grated garlic and ginger
- 2 cherry tomatoes
- 1 tsp olive oil
- Chop the leek into small pieces and put in a bowl.
- Wrap the tofu in paper towels and let sit to soak up the water from the tofu for half an hour.
- Mix the miso, soy sauce, sugar, sake, and sweet flour paste.
- Pour 1 tsp of olive oil into a frying pan, and once hot, add the grated garlic and ginger.
- When it starts to smell nice, add the minced meat and fry on medium heat.
- When the meat has browned, add the leek and continue cooking.
- When the leak becomes soft, add the tofu.
- When you add the tofu, break off pieces with your hands, and chop it roughly into smaller pieces, like the minced pork, using a wooden spatula.
- Next add the mixed sauce to the frying pan.
- Mix and cook well until the sauce has reduced.
- It usually takes about 5 to 10 min on medium to low heat.
- Finally, prepare a bowl of cooked rice and put the cooked meat on the rice.
- If you wish, garnish with cherry tomatoes and enjoy!
