Brick Flambe
- 1 egg
- 1/3 cup dry bread crumbs
- 2 tsp. caraway seed
- 1 pkg. (200 g) Cracker Barrel Brick Cheese, cut in half horizontally
- 3 Tbsp. butter
- 2 Tbsp. brandy, warmed
- 1 lemon, cut in half crosswise
- Beat egg lightly in shallow dish; set aside.
- Combine bread crumbs and caraway seed in separate shallow dish.
- Dip cheese into egg, then in crumb mixture, turning to evenly coat both sides.
- Melt butter in skillet on medium heat.
- Add cheese.
- Cook 2 min.
- on each side or just until lightly browned on both sides.
- Place cheese in very hot ceramic or other heatproof dish.
- Top with brandy; carefully ignite brandy.
- Squeeze lemon over flaming cheese to douse.
- Serve with assorted Christie Crackers.
