Coconut Date Snack Bites
- 2 cups Medjool Dates, Pitted And Chopped
- 1 cup Unsalted, Roasted Almonds
- 1/2 cups Rolled Oats
- 13 cups Unsweetened Coconut, Plus 1/4 Cup For Coating
- 2 Tablespoons Honey
- 1/2 teaspoons Cinnamon
- 1 pinch Sea Salt
- Remove pits (if necessary) from dates, give them a rough chop and add to a food processor bowl along with almonds.
- Pulse about 8-10 times, or until dates and almonds are broken down to small pieces.
- Add rolled oats, 1/3 cup coconut, honey, cinnamon and salt.
- Process until everything is well-combined.
- Empty snack bite mixture onto a rimmed plate or baking sheet.
- By teaspoonfuls, roll into 1-inch balls.
- Roll bites into remaining 1/4 cup coconut and press to adhere.
