Peaches `N' Cream Pie

  1. Preheat oven to 350u0b0.
  2. Lightly coat a 10-inch pie pan with cooking spray.
  3. In a medium mixing bowl, add flour, salt and baking powder and stir to combine.
  4. Add melted margarine, milk, egg and pudding mix.
  5. Mix all ingredients on medium speed of an electric mixer.
  6. Pour mixture into prepared pie pan.
  7. Lay peaches over pudding.
  8. In separate bowl, combine cream cheese and 1/3 cup sugar and mix on medium speed until well-combined.
  9. Gently spread cream cheese mixture over peaches; leaving 1-inch from edge of pie plate uncovered.
  10. In a small bowl, combine 1 tablespoon sugar with cinnamon.
  11. Mix and sprinkle over pie.
  12. Bake for 35 minutes. Served hot with a dollop of fat-free vanilla ice cream and additional peaches.
  13. Makes 10 servings.
