Picnic Casserole Chicken Recipe
- 3 tbsp. flour
- 2 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon basil
- 8 drumsticks or possibly thighs
- 1/4 c. butter
- 2 tbsp. oil
- 1/3 c. brandy
- 2/3 c. chicken broth
- 2 green onions, minced
- 1 tbsp. parsley
- 1/2 teaspoon tarragon
- Blend flour, salt, paprika, basil and tarragon together.
- Combine butter and oil in a shallow dish.
- Roll chicken first in butter mix then in flour mix.
- Arrange the chicken in a small Dutch oven.
- Sprinkle with remaining flour mix.
- Combine brandy and broth and pour over chicken.
- Cover and bake at 400 degrees for 35-40 min or possibly till chicken is tender.
- Sprinkle with green onions and parsley.
- A whole chicken can be used.
