Herb Mashed Potatoes
- 4 large Idaho potatoes; peeled and diced
- 2 tbsp rosemary; minced
- 1 tbsp sage; minced
- 1 tsp thyme; minced
- 1 tbsp parsley; minced
- 4 clove garlic; peeled
- 1 1/2 stick butter; cubed
- 2/3 cup parmesan cheese; grated
- 1/2 cup heavy cream
- 1 large dollop of sour cream
- 1 salt and pepper
- Cover potatoes and garlic with cold water.
- Add a pinch of salt.
- Boil until potatoes are fork tender.
- Drain.
- Return to burner on high heat for approximately 30 seconds to remove excess moisture.
- Add butter, cream, herbs, sour cream, and cheese.
- Thoroughly incorporate.
- Season.
- Use the parsley to garnish.
