Broccoli and Cheddar Cheese Soup
- 1 onion, chopped
- 2 Tbsp. Kraft Calorie-Wise Zesty Italian Dressing
- 1 can (10 fl oz/284ml) 25%-less sodium chicken broth
- 2-1/3 cups water
- 4 cups chopped broccoli
- 1 cup skim milk
- 1/2 cup instant white rice, uncooked
- 1 cup shredded Cracker Barrel Light Medium Cheddar Cheese
- Cook onions in dressing in large saucepan on medium heat 3 to 5 min.
- or until tender, stirring frequently.
- Add broth, water and broccoli; stir.
- Bring to boil; cook on medium heat 8 to 10 min.
- or until broccoli is tender.
- Stir in milk and rice; cook 5 min.
- Blend, in batches, in blender until smooth, returning each blended batch to saucepan.
- Cook on low heat 5 min.
- or until heated through.
- Serve topped with cheese.
