Chicken noodle soup
- 1 tbsp olive oil, extra virgin
- 1 cup chopped onions
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 lb chicken breast (chopped in 1 inch pieces)
- 1 tbsp minced garlic
- 1 tsp thyme leaves
- 6 cup chicken broth
- 3 cup wide egg noodles
- Once chicken is chopped in pieces season to your liking( example: salt, black pepper or poultry seasoning)
- In a large pot or dutch oven, heat oil over medium heat.
- Add carrots, celery, garlic and onions.
- Cook until onions are translucent
- Add chicken and thyme, cook for 2 1/2 minutes
- Add chicken broth and bring to a boil
- Add noodles and reduce heat.
- Let simmer for 12 minutes or until noodles and chicken are done.
