Amber Simm's' Marshmallow Recipe
- 3 tablespoons unflavored gelatin (4 packets)
- 3 cups sugar
- 1 14 cups light corn syrup
- 14 teaspoon salt
- 2 teaspoons peppermint extract
- 34 cup water
- 34 cup water
- red food coloring
- powdered sugar
- brush 9X13 pan with oil and line with wax paper also brushed with oil.
- place sugar, corn syrup, salt and 3/4 cup water into medium saucepan and bring to a boil over high heat stirring to dissolve sugar.
- cook without stirring until mixture is 238 degrees (about 9 min) - firm ball stage.
- meanwhile put 3/4 cup cold water into bowl and sprinkle with gelatin, let soften 5 minutes.
- turn mixer on low and beat hot syrup into gelatin mixture.
- gradually raise speed to high.
- beat until mixture is very stiff about 12 minutes.
- beat in peppermint extract.
- stir in red food color with spatula until desired color (looks like marble), pour into dish lined with wax paper.
- let marshmallow set up then unmold onto countertop coated with powdered sugar (so it doesn't stick).
- sprinkle powdered sugar all over marshmallow, smooth to coat.
- brush knife (or kitchen scissors) with oil and cut marshmallow into 2 inch squares and roll in bowl of powdered sugar to cover completely.
- Enjoy!
