Amber Simm's' Marshmallow Recipe

  1. brush 9X13 pan with oil and line with wax paper also brushed with oil.
  2. place sugar, corn syrup, salt and 3/4 cup water into medium saucepan and bring to a boil over high heat stirring to dissolve sugar.
  3. cook without stirring until mixture is 238 degrees (about 9 min) - firm ball stage.
  4. meanwhile put 3/4 cup cold water into bowl and sprinkle with gelatin, let soften 5 minutes.
  5. turn mixer on low and beat hot syrup into gelatin mixture.
  6. gradually raise speed to high.
  7. beat until mixture is very stiff about 12 minutes.
  8. beat in peppermint extract.
  9. stir in red food color with spatula until desired color (looks like marble), pour into dish lined with wax paper.
  10. let marshmallow set up then unmold onto countertop coated with powdered sugar (so it doesn't stick).
  11. sprinkle powdered sugar all over marshmallow, smooth to coat.
  12. brush knife (or kitchen scissors) with oil and cut marshmallow into 2 inch squares and roll in bowl of powdered sugar to cover completely.
  13. Enjoy!
