Nineties Style Potato Salad

  1. Cook potatoes in lightly salted boiling water until fork-tender.
  2. Cool, then cut into eighths.
  3. In a large mixing bowl, toss all ingredients lightly to combine.
  4. Adjust seasoning with salt and pepper, if necessary.
