Chicken Enchilada Casserole Recipe
- 3 c. chicken breast, cooked (do not use canned)
- 1 bag Tositos
- 2 cans Ro-Tel tomatoes with chili peppers
- 2 c. shredded Velveeta cheese
- Put Tostitos in 13x9 inch pan.
- Pour 1 can Ro-Tel tomatoes over the chips.
- Sprinkle minced chicken (bite sized), then cheese, then 2nd can of tomatoes.
- Bake at 350 degrees for 30 to 45 min.
- You can spice this up with Tabasco, if desired.
