Revelutionary Times Mashed Pumpkin
- 1 small pumpkin
- 4 tablespoons butter
- 14 cup cider vinegar
- 1 teaspoon ginger
- preheat oven to 325 degrees.use paper towel or napkin dabbed with 1 tablespoon butter or margarine to lightly grease pan.
- wash pumpkin,cut pumpkin in half crosswise,someone else will need to hold the pumpkin.
- use spoon to scoop out seeds.dicard seeds.
- place the pumpkin halves,cut-side down, on pan.
- be sure to use a pan with sides because pumpkin juices may ooze out.
- bake pumpkin 45 minutes or until fork easily pierces the fleshy part.cool 10 minutes.
- peel the skin off the pumpkin with a sharp knife.
- put pumpkin in a bowl.
- mash pumpkin withpotato masher or fork.
- stir in 4 tablespoons butter,1/4 cup vinegar & 1 teaspoon ginger.
- serve hot.
