Cider-Roasted Squash
- 1 butternut squash (peeled and cubed)
- 1 medium onion, cut into thin wedges
- 2 tablespoons apple cider
- 1 tablespoon olive oil
- 1 12 teaspoons brown sugar
- 12 teaspoon salt
- 18 teaspoon pepper
- 18 teaspoon ground nutmeg
- Preheat oven to 425.
- Place the squash and onion in a greased 9 * 13 baking dish.
- Combine remaining ingredients: pour over squash mixture.
- Cover and bake at 425* for 35 minutes or until tender, stirring every 10 minutes.
