- 1 teaspoon Chili Powder
- 1/2 teaspoons Cinnamon
- 1/2 teaspoons Cumin
- 1 cup Packed Brown Sugar
- 1 head Garlic, Finely Minced
- 2 Tablespoons Red Pepper, Finely Minced
- 2 Tablespoons Jerk Sauce Or Tabasco
- Preheat oven to 350 f.
- Rinse chicken and pat dry.
- Heat 1 tablespoon of olive oil in a skillet over med/high heat.
- In a small bowl, combine salt, pepper, chili powder, cinnamon, and cumin.
- Rub this mixture all over the chicken.
- When the oil is very hot, almost smoking, throw your chicken in and sear on both sides.
- This usually takes about 10 minutes total.
- In another bowl, mix brown sugar, garlic, pepper, and hot sauce to form a paste.
- When the chicken is nicely browned on both sides, toss it into a greased baking dish and scoop the garlic/sugar mixture on top of the chicken.
- It doesnt have to be perfect, as long as its on there somewhere...the oven with do the magic.
- When thats done, throw it in the oven and leave it for 45 minutes.
- Remove from the oven, when the chicken is bubbling over with the glaze and serve.
- (I like them when theyve cooled for about 15 minutes and the glaze gets really sticky.
- Weve made this recipe, both mild and hot, so dont be shy experiment a little with the spices types/amounts.
