Citrus and Mint Quinoa with Feta Crumbles

  1. In a small saucepan, stir together the orange juice, water, and quinoa.
  2. Bring to a boil over high heat.
  3. Reduce the heat and simmer, covered, for 12 to 15 minutes, or until the quinoa is tender and the liquid is absorbed.
  4. Remove from the heat.
  5. Fluff the quinoa with a fork.
  6. Let stand, covered, for 10 minutes.
  7. Meanwhile, in a medium bowl, stir together the oil and lemon juice.
  8. Stir in the remaining ingredients except the feta.
  9. Set aside.
  10. When the quinoa is ready, use a fork to lightly stir it into the oil mixture.
  11. Gently fold in the feta.
  12. Serve at room temperature.
