Sweet Blueberry Cornbread

  1. Preheat oven to 400.
  2. Place 6" cast iron with 1 tablespoon oil in oven
  3. Or grease 8" pie plate or pan and set aside
  4. Combine cornmeal, flour, sugar, baking powder, and salt in a bowl
  5. Mix 1/2 cup oil, eggs and milk and add to dry ingredients
  6. Mix just till uniform
  7. Add blueberries, gently mix in
  8. Let sit 5 minutes
  9. Pour into pan and sprinkle with 1 tablespoon sugar
  10. Bake 20-25 minutes, until top is golden
